They differ from flatbreads in that their structure is mostly determined by egg proteins, not gluten. Examples of foods which fall under this tag: American-style pancakes, crepes, palatschinken/pfannkuchen, blini. Examples of foods which don't fall under this tag: tortillas, naan.
