I am having trouble finding information on which API versions are supported in each version of Acumatica.

Open the Web Service Endpoint screen, and you will see all supported endpoints. The screenshot is from version 23R1, you can see 17.200.001, 18.200.001, 20.200.001, and 22.200.001 versions are currently supported.
