Cauliflowers are brassicas, cultivars of Brassica oleracea. They are grown from seed as an annual vegetable crop. Cauliflowers for a white head of aborted floral meristems, which is eaten as a vegetable. The stalks and leaves are typically discarded, but they can also be used in vegetable broth. They are very similar to broccoli but with white meristems instead of green flower(flowers) buds.
The earliest records of cauliflowers date to the 16th Century when they were introduced from Genoa to France.
White cauliflowers are by far the most common, but orange, green, and purple cultivars do exist. The green variety is actually a hybrid with broccoli, also known as a broccoflower.
