I see recipes that use raw oat flour. But I have read that eating raw wheat flour causes samonella. What is it about oats that allows you to eat them raw?

It’s actually been e.coli, not salmonella that’s been the issue with raw wheat in recent years. (And I thought it was listeria before that). And I suspect that much of the problem is when the wheat from many farms are brought together and mixed, so one field with animal poop on it could contaminate many tons of flour. – Joe Feb 05 '22 at 23:07

Oat flour is one of the few flours that is cooked (steamed) prior to milling, so it is safe to eat raw. But many other flours are not

2Oat flour is sometimes but not always made from steamed oats. Oat flour from raw oats is not safe to consume raw. – Sneftel Feb 05 '22 at 17:15

Packaged oats (the grains themselves) are usually steamed but not sure about oat flour. – RYZEXY Feb 08 '22 at 03:54
