What temperature should fruit pies be cooked to?

What's a good target internal temperature for fruit pies, for the fruit to be cooked? Most recommendations seem to be to have the filling bubbling, plus 5 minutes, but is there a more precise way to know when the pie is done?

Pie crust too soft to put in pan

My pie pastry is too soft that I can't pick it up to put in pan after rolling it. The softness/pliable is like the butter/shortening too warm needs to be refrigerated. I tried refrigerating it overnight (this delayed the completion of my pie) but…

Combining hot melted sugar with cold liquid ingredients

So I was making a corn-syrup-free pecan pie, and it called for a procedure that I've never seen before. To combine the liquids (milk, eggs, vanilla) with the solids (dark brown sugar, butter, flour) it called for combining the solids over medium…

I want to make a Key Lime pie using only goat's milk(cow's milk allergy issues). The filing is usually, if not always, made with condensed milk. No one sells sweetened condensed goat milk - not even Meyenberg. Any suggestions?

Should I thaw cherries for a sour cream cherry pie?

I have a bag of frozen cherries and want to bake a pie with them, adding creme fraiche. I'll probably use a recipe intended for sour cream, as they are easier to find. But they tend to use fresh cherries, so they don't have recommendations on how to…

"1 cup, drained" - does that mean measure before or after draining?

I know this is similar to other questions like "1 cup chopped nuts" vs "1 cup nuts, chopped", but I wasn't sure about whether it applies to things that have liquid. I was trying to make the pumpkin pie from America's Test Kitchen, and it calls for…

I want to make a fructose free one for my dad. I am not a fan of sugar substitutes, either. Karo doesn't have fructose but sugar does. If I left out the sugar could I use corn syrup only or would it not set up?

Non-flaky non-crumble pie crust

For some reason everone seems to love the standard pie crusts and want to get it either flaky or crumbly. For me, both are equivalent to "dry and floury, and give me the same shills down my spine as nails on a black board". Thus, I've rarely eaten…

This is the recipe: http://allrecipes.com/recipe/220694/philly-chicken-pot-pie/ It's perfect because it's so simple, except I don't like the "cooking creme", which is an unappetizing concoction of strange ingredients and too much salt. What regular…
